Beef Burger

Raise the subject of beef burgers on any barbecue forum or social media site, and you open a can of worms! From those for whom the smash burger is everything to those who insist on a certain mix of beef cuts, those who won’t season until cooking is finished, and those who add everything but the kitchen sink!

Now, don’t get me wrong, I love a lightly seasoned burger made of chuck beef that I’ve ground/minced myself, but in the real world, that’s not always possible.

This burger recipe makes a burger from bought mince. It’s not the best you’ll have, for sure, but I doubt it’s the worst either.

This recipe was first posted on the now-defunct sausagemaking.org forum by a member with the username Oddley. My measurements are slightly different to his, but close enough for it to still be his recipe, not mine.

As with any cooking, the better the ingredients, the better the food. Try to buy quality mince that’s 20% fat – often written as 80/20 beef mince.

This recipe does need accurate scales to measure the small amounts of spices. These can be bought on sites such as Amazon – I use a Uniweigh Digital Pocket Scale – they’re about £15.

Ingredients

1 kg Beef mince, 20% fat
40 g Breadcrumbs, from a good quality loaf
120 g Onion, grated
10 g Salt
1.6 g Black pepper, ground
0.8 g Smoked sweet paprika I use
0.8 g Granulated onion
0.4 g Cumin, ground

Method

Mix the meat and spices then add the breadcrumb and onion. Mix until slightly sticky an then form into burgers.
