aka Carolina gold…
…or, at least, an Englishman’s take on it!

The idea for this sauce came from using the mop sauce from the Spruce eats website.
My son-in-law, Simon, tasted it and said that he thought it would make a good barbecue sauce. I played with it and came up with this sauce. Afterwards, whilst researching sauces, I realised that it is very similar to SC Mustard sauce – I think that I must have seen recipes for that, and that they’d lodged in the back of my mind. That said, this is still somewhat removed from the classic sauce.
Ingredients
60 g Apple cider vinegar
90 g Water
240 g US yellow mustard – I use French’s
60 g Honey
90 g Granulated white sugar
Black and white pepper, to taste
20 g Butter, to finish
Method
Mix and simmer for 15- 20 minutes before stirring in the butter at the end of cooking
It’s particularly good on beef and pulled pork.
