Apple, Cottage Cheese and Walnut Pancakes

This is my variation of a recipe published in Bon Appetit Magazine. I’ve changed it to include walnuts, increased the apple amount to 1/2 of an apple and scaled it down to two servings. Maple syrup on them is good but the pancakes are fine as is. Any apple seems to work, these were made with Cosmic Crisp.

Ingredients

37 g AP (plain) flour (1/4 c)
17 g Whole wheat flour (2 T)
20 g Honey
2 Egg yolks
1 g Salt (1/4 t)
1 g Cinnamon (1/4 t)
112 g Cottage cheese (1/2 c)
34 g Walnuts (1/3 c)
99 g Grated peeled apple half (2/3 c)

Mix then fold in:

2 Egg whites beaten until stiff peaks form

Fry in an oiled pan on medium heat until bubbles break on the surface, then flip. Makes 6 pancakes.

The apple can be replaced by a pear, in which case, switch the cinnamon for cardamom.
