Seeded ‘White’ Bread

The NHS website advises that: “Diets high in ultra-processed foods have been linked to an increased risk of health conditions such as obesity, type 2 diabetes and heart disease”. This begs the question: “Why is nearly all commercially made bread in this country ultra-processed, including that used in NHS hospitals?” It is a great shame that the government isn’t more proactive in doing something about it.

It’s for this reason that I make my own bread. Wholemeal bread is far better for us than white, there’s just one problem: I don’t like wholemeal toast! This recipe is my attempt at a compromise. A white-flour bread that also has a decent amount of fibre.

It’s a great recipe – have a look…

Pretzels

When I made these, I wasn’t that pleased with them, thinking that the outside should be crisper and the centre less dense. But then Hannah, my daughter, who’s been to Berlin twice, told me that they are just like the ones she bought there. My judgement was based on ignorance rather than knowledge!

Even so, I now leave them to rise a little after shaping and before boiling. I’ll also try different toppings: poppy seeds, sesame, celery seeds, etc. These use bicarbonate of soda – really traditional ones use lye – yes, believe it or not, they use caustic soda in commercial production.

Pizza Dough

I’m a bit ‘on the fence’ when it comes to pizza dough. I quite like this dough, but I also like a higher hydration dough that gives a base with larger air holes. This one is easier to handle, though.

In fact, I really don’t know why I’m writing about making pizza dough; Paul is so much better at it than I am. Hopefully, he will post about some of his pizzas in due course.

Soft Potato Bread Rolls

My recipe for soft bread rolls became a bit of a cause-célèbre back in the days when the sausagemaking.org forum was active. I’m quite proud of it. But, I never thought it was that good for burgers – it fell apart too easily. I toyed with the idea of using a pretzel roll or even a pseudo-brioche, one that’s a lot less sweet – using butter instead of oil in my soft bread roll for example. However, I’ve settled on a roll made with potatoes, and not only potatoes but instant potato flakes. The idea for these buns comes from a post on the sausage forum that referred to a recipe on the cookistry website. My recipe is a slight adaption of that one using information learned from their site.
It’s great for burgers, pulled pork and things of that nature. My original soft roll is still best for a cheese and onion roll though!

Chelsea Bun(ish) Recipe

Originally posted in 2008:

Now I know if I call this recipe a Chelsea Bun, someone will come along and say, “Oh, no it’s not, a Chelsea bun is made with currants, lemon zest, or whatever and glazed with the milk of a particular species of Yak, only found on one lost island in Battersea Park!” Hence the ‘ish’ in the title!

I made these a couple of weeks ago from a recipe in Prue Leith and Caroline Waldegrave’s Cookery Bible but wasn’t 100% happy with them. Here’s my take on the recipe, it still needs fine tweaking. I think that it probably needs more liquid.

North Staffordshire or Derbyshire Oatcakes

In 2013, I wrote:

It’s quite amazing how certain foods are so local that even though you live in the County bordering those where they’re made you’ve managed to get to 56 years old without ever having them.

The Derbyshire or North Staffordshire oatcake is such a one; it wasn’t until about 6 weeks ago, on a visit to Hartington, that I had tasted my first oatcake. I’ve hardly stopped eating them ever since!
